...Halloween Bog "Chicken
Cacciatore"


Ingredients
4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves
Directions
Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.....

*** Halloween Bog "Cheesy/Onion/Garlic" Biscuits ***

Ingredients:
2 cups baking mix, Bisquick
2/3 cup milk
1/2 cup shredded sharp Cheddar cheese
1/4 cup butter, melted with 1 teap garlic powder
1/2 cup grilled oinon, 1 med/lg onion
Preparation:
In mixing bowl, mix together baking mix, milk, grilled onion and cheese until a soft dough forms, then beat vigorously 30 seconds. Drop from spoon onto ungreased baking sheet and bake at 450° until golden brown, 9 to 10 minutes. Mix together butter and garlic powder. Brush over hot biscuits and serve hot. Makes 10 - 12.
Goes great with soups.stews.or just a great side for any meal...

..........Halloween Bog "EARTH DAY" Cabbage Rolls.............

Ingredients:
1 large head of cabbage
1 to 1/2 pounds lean ground beef
1/2 cup instant rice or cooked rice
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 egg, lightly beaten
1/2 cup finely chopped onion
1/2 to 1 teaspoon cinnamon, divided (more or less, to taste)
1 can (10 1/2 ounces) tomato soup, undiluted
1 can (14.5 ounces) tomatoes
Preparation:
Tear the leaves off the cabbage and cook in boiling water or steam until wilted enough to be flexible. Cool. Mix ground beef, rice, egg, onion, and salt, pepper, and 1/2 teaspoon of cinnamon together. Form a few tablespoons of the mixture into a cylinder, then roll up in a cabbage leaf. Secure rolls with toothpicks. Combine the soup and tomatoes in a Dutch oven. Place cabbage rolls in the Dutch oven. Sprinkle with about 1/2 teaspoon of cinnamon. Cover and simmer for 1 1/2 to 2 hours.
Serves 6.

3 boneless skinless chicken breasts, thawed or fresh
1 8oz package Philadelphia cream cheese, room temperature
1 8oz package flake style crab meat
1 lb bacon strips
paprika, to taste
garlic powder, to taste
salt and pepper, to taste
....................... Directions .......................
Preheat oven to 375°F.
Mix crab, cream cheese, paprika, garlic powder, salt and pepper in a mixing bowl with beaters until smooth, no large chunks of crab.
Pound chicken breast to about 1/2 inch thick and spread 1/3 of mixture on top. Roll up chicken breast and wrap in 3-4 strips of bacon. Place in 9x13 casserole dish (I line my dish with nonstick Reynolds wrap, but it isn't necessary). Repeat for other 2 chicken breasts.
Bake for 1 hour and enjoy! mmmm So Yummy in my Tummy:)

Ingredients
3 cups grated carrots
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/4 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple with juice
3/4 cup chopped pecans
3 1/2 cups confectioners' sugar
1 (8 ounce) package Neufchatel cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract
1 cup chopped pecans
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2.In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil, 1 1/4 teaspoon vanilla, pineapple and 3/4 cup chopped pecans. Spoon batter into prepared pan.
3.Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
4.To Make Frosting: In a medium bowl, combine confectioners' sugar, Neufchatel cheese, 1/2 cup butter or margarine and 1 1/4 teaspoons vanilla. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.
Save some frosting and use food coloring to decorate the top of cake with carrots and stems..

2 pounds whole chicken wings
1/2 cup butter, melted
4 teaspoons hot pepper sauce, more to taste
3/4 teaspoon garlic salt
1/4 teaspoon paprika
***DIPPING SAUCE***
3/4 cup sour cream
1 tablespoon dried minced onion
1 tablespoon milk
1/2 cup crumbled blue cheese
1/4 teaspoon garlic salt
1/8 teaspoon dry mustard
paprika, optional
Celery sticks, optional

Cut chicken wings into three sections; discard wing tips. Place wings in a greased 15-in. x 1 O-in. x 1-in. baking pan. Combine butter, hot pepper sauce, garlic salt and paprika; pour over wings.
Bake at 375 degrees F for 30 minutes. Turn; bake 20-25 minutes longer or until chicken juices run clear.
Meanwhile, for sauce, combine the sour cream, onion, milk, cheese, garlic salt and mustard in a blender. Cover and process until smooth. Pour in to a bowl; sprinkle with paprika if desired. Cover and refrigerate until serving.
Drain wings. Serve with sauce and celery if desired.

cranberry,cherry,or raspberry flavor
6 oz water
6 oz vodka
Preparation:
1.Pour gelatin into a bowl.
2.Add boiling water, stirring until the gelatin is dissolved.
3.Stir in liquor.
4.Refrigerate until cool.
5.Pour into shot glasses, molds or a baking pan for a sheet of Jell-O to cut up once set.
6.Refrigerate until the liquid sets. (At least 2 hours, but overnight refrigeration is recommended)
7.Serve cold.

40 medium mushroom caps (stems removed)
1/2 cup cream cheese {softened}
1/2 cup 1% low-fat milk
1 clove garlic , minced
1 pinch nutmeg
1 pinch pepper
1 tablespoon flour
2 tablespoon mayonnaise
1 tablespoon lemon juice
3 tablespoons parmesan cheese , kraft
1 green onion , sliced thin
1 can crabmeat , drained
1 can baby shrimp , drained
1/2 cup cheddar cheese , finely grated
extra parmesan cheese , for sprinkling
*****************DIRECTIONS******************

Wipe mushroom caps with a damp cloth to remove any dirt.

Set aside.

In a saucepan on low heat combine and stir with a wire whisk: flour, cream cheese, milk, garlic, salt, nutmeg, pepper and heat gently until cream cheese is no longer lumpy.

Stir in mayonnaise, lemon juice, parmesan cheese and green onion.

Remove from heat and fold in crab meat and shrimp gently with a rubber spatula.

Cover and allow to cool completely before stuffing the mushrooms.

Stuff each mushroom cap with filling.

Place in a 9 x 13 inch greased baking dish and sprinkle with cheddar cheese and extra Parmesan cheese.

At this point you can cover the dish with plastic wrap and store in the fridge overnight if you want to prepare them ahead.
